Anna's Chicken Lettuce Tacos
INGREDIENTS
CHICKEN MIXTURE
- 2 large chicken thighs
- 1.5 onion
- 1 garlic clove
- 1 tbsp fresh oregano
- 1 tsp cumin powder
- 1/2 tsp cinnamon
- 1/4 tsp paprika
- small pinch allspice
- 1/2 tsp salt
- 3 tsp oil
TOMATO SALSA
- 3 tomatoes
- 1/4 onion
- 1/4 bunch of coriander
- 1 garlic clove
- 1 jalapeno or chilli pepper
- 1 lime
- salt to taste
COOLING DRESSING
- crème fraiche
- squeeze of lime
TO SERVE
- 1 baby gem lettuce, leaves carefully separated
- tortilla chips
METHOD
- Chop the chicken into strips and marinate for 10 minutes in the spice mixture of oregano, cumin, cinnamon, paprika, allspice, and salt.
- While the chicken is marinating, chop the onion and garlic. After 10 minutes, add oil to a pan and cook the chicken, onion and garlic.
- As the chicken mixture cooks make a salsa by finely chop onion and chilli, then mix together and add lime juice and salt. Let that combine while you chop tomato and then add together. Sprinkle over some chopped coriander.
- Make a cooling dressing by adding a squeeze of lime to some crème fraiche and arrange the lettuce leaves on plates.
- When the chicken mixture is cooked, build the tacos in the lettuce leaves and serve with tortilla chips and extra salsa.
