Kim's Homemade Burgers
Ingredients
500g lean minced beef
1 medium onion finely chopped
2 garlic cloves, crushed
1/2tsp dijon mustard
1 medium egg
olive oil
salt and pepper
Method
Put your beef in a bowl and break it up with your fingers.
Heat the oil in the pan, and slowly sweat the onions until softened but not coloured. When nearly ready add the garlic and cook for another 3 or 4 minutes until it too is softened – but don’t let it burn as it takes on a horrible bitter flavour.
Once the onion mixture has cooled a little add it to the beef and mix it in really well.
Add the mustard, season well with salt and pepper, pour in the egg and make sure that you squidge everything really thoroughly together with your hands until it is well mixed.
Divide the mixture into 4 even portions and mould these into round burger patties. Put them back in the fridge to chill and hold their shape until it’s time to light the barbecue and get them cooking.
When ready, serve on a brioche bun with the barbecue sauce and any other salad accompaniments, cheese or pickles you fancy.
