Jemma's Wimbledon Sweet Treats

Cheesecake-Stuffed Strawberries:

"A twist on the classic strawberry & cream duo!"

Ingredients

  • 20 large, ripe strawberries
  • 100ml double cream
  • 200g cream cheese
  • 50g icing sugar
  • ½ teaspoon vanilla extract or paste
  • 5-8 digestive biscuits

Preparation

  1. Prepare the strawberries by rinsing and patting them dry.
  2. Chop the top off the strawberries and place them on a serving tray or plate so they stand up straight.
  3. With a sharp knife, cut an ‘X’ in the strawberry and put them to one side.
  4. Whisk the cream until it’s at soft peaks stage.
  5. Then add the cream cheese, icing sugar and vanilla. Whisk until light and fluffy.
  6. Spoon the mixture into a piping bag and pipe into strawberries you have prepared.
  7. Crush the biscuits into a fine crumb and sprinkle over the top of the strawberries if serving immediately.
  8. Or refrigerate until serving and add the biscuits just before serving.

Top Tips

  • Leave out the biscuit topping to make this dessert gluten-free!
  • Swap out the cream and cream cheese to make this dish vegan!

Summer Cup Cooler:

"A simple and refreshing mocktail that costs under £1 per cup!"

Ingredients

  • 2 scoops of lemon sorbet
  • Lemonade
  • Ice
  • Mint, cucumber and orange
  • Fruity Iced Tea

Preparation

  1. Add ice to a tall glass (about ¼ full).
  2. Pour over your choice of fruity iced tea - we recommend peach flavour!
  3. Add cucumber ribbons, sliced strawberries and oranges.
  4. Add two scoops of lemon sorbet.
  5. Top with lemonade.

Top Tips

  • Pour the lemonade slowly to avoid overflowing.
  • Frozen fruit works well in this cocktail.
  • Swap out the iced tea for 50ml of your choice of Summer Cup Spirit to create the perfect summer cocktail!

Wimbledon Biscuit Pops

"These tennis ball biscuit pops are a lovely & tasty decorative snack!"

Ingredients

  • 200g white chocolate & a couple of drops of natural green food colouring
  • Around 10-12 of any sandwich biscuit of your choice
  • Lollipop sticks

Preparation

  1. Melt white chocolate in a bowl, and combine with natural green food colouring.
  2. Take a lollipop stick and dip one end into your green chocolate mixture.
  3. Place the chocolate sandwich biscuit on a lollipop stick using the ‘filling’.
  4. Dip the biscuit in your melted chocolate, and allow to set.
  5. Pipe white chocolate lines on-top to create a perfect tennis ball!

Top Tip

  • Swap out the white chocolate for 200g green candy melts
