- 50g icing sugar
- ½ teaspoon vanilla extract or paste
- 5-8 digestive biscuits
Preparation
- Prepare the strawberries by rinsing and patting them dry.
- Chop the top off the strawberries and place them on a serving tray or plate so they stand up straight.
- With a sharp knife, cut an ‘X’ in the strawberry and put them to one side.
- Whisk the cream until it’s at soft peaks stage.
- Then add the cream cheese, icing sugar and vanilla. Whisk until light and fluffy.
- Spoon the mixture into a piping bag and pipe into strawberries you have prepared.
- Crush the biscuits into a fine crumb and sprinkle over the top of the strawberries if serving immediately.
- Or refrigerate until serving and add the biscuits just before serving.
